Shallow Grave
When hunting Canada geese, it's best to place your decoy spread in the center of the field where geese are feeding, rather than beside fence rows. To conceal myself in the middle of a field without building a conspicuous blind, I dig a long, shallow pit 20 inches deep, 24 inches wide and 30 inches long. I spread cornstalks over any loose dirt and place goose decoys on either side of the pit. When geese approach, I simply crouch down in the pit, safely hidden from the gaze of wary honkers. (Make sure to get permission from the landowner before digging.)

Conservationist, community pillar in Memphis
 Anyone from Memphis, Tenn., can tell you that "Henry Morgan" is a name well known and well liked. President of Boyle Investment Company, a development company started in Memphis in 1933, Henry Morgan has had a finger on the pulse of his hometown for many years, and it is very important to him that the pulse is strong. He and his brother, Allen, have long been involved in Conservation Through the Arts, a collaboration between Ducks Unlimited and ArtsMemphis designed to get children out into nature. "Both conservation of game and the arts are so important to quality of life," Morgan said.

Teal for Brunch |

| Ingredients |
- 2 teal breasts and legs, skinned and boned
- 8 slices sourdough bread
- 2 Tbsp. Madeira wine
- 2 egg yolks
- 5 Tbsp. butter
|
- 2 Tbsp. flour
- 3 shallots
- 4 sprigs parsley
- Salt
- Pepper

| Cooking Instructions |
- Chop teal breasts into pieces approximately ¼ inch in size. Also chop shallots and parsley.
- Sauté shallots in 5 Tbsp. butter over medium heat until browned. Turn heat to medium high and add parsley and teal meat.
- Cook approximately 1 minute, then remove from heat and add Madeira, flour and egg yolks. Refrigerate overnight.
- In the morning, prior to serving, toast the 8 slices of sourdough. After toasting, spread an equal amount of the teal-egg mixture on each slice.
- Sprinkle toast with salt and pepper, then place each slice in the oven, directly on the wire rack, and bake another 10 minutes at 350 degrees.
- Serves 4 people. Fresh fruit goes well with this dish.
