The Memphis, Tenn., Ducks Unlimited chapter earns its way into the chapter spotlight this month with its most recent event, the Pigs in Flight BBQ Competition, held in March. Over the course of the four-day event, the Memphis Chapter played host to more than 1,500 guests and drummed up tremendous support for DU's conservation mission.

 My 19-year-old daughter gave me a unique gift this past Christmas: a shopping bag filled with duck blind snack foods. The assortment included Spam, pickled okra, smoked oysters, Vienna sausages, garlic-stuffed olives, soy-packed sardines, Brussels cookies, petite dill pickles, hot mustard, Cajun salsa and crackers, and a few other delectables that didn't last long enough to leave a passing memory.

Minnesota Crock Duck |

| Ingredients |
- 1 lb. pork sausage links, sliced
- 6-8 whole cloves
- 1 onion, peeled
- 4 sprigs fresh parsley
- 2 sprigs fresh thyme
- 1 sprig fresh rosemary
|
- 1 bay leaf
- 3 Tbsp. tomato paste
- ½ lb. bacon
- 1 lb. dry navy beans, soaked overnight and drained
- 3 carrots, sliced
- 3 cloves of garlic, minced
- 1 lb. duck breast, skinned, boned & sliced into thin strips

| Cooking Instructions |
- Cook the sliced sausage on medium heat in a frypan.
- Push the whole cloves into the whole onion. Tie up the bacon with (clean) string. Tie up the parsley, thyme and rosemary with some more string.
- Put all ingredients in a crock pot. Add enough water just to cover everything and stir slightly. Set the crock pot to high for 1 hour, then turn to low for 6-8 hours, but don't lift the cover!
- Before serving, remove the onion, the bacon and the herbs. Serve with good bread.
