Just wondering some of your guys' favorite ways to simply cook, preferably fry, some woodie breasts up. Not looking for anything extremely involved, although they'd be nice :D

I have not done wood duck but the way I do large ducks and goose breasts is to wrap bacon around and hold with toothpicks, season with salt, pepper, and garlic powder on both sides cook on the grill until done Med rare. You have to be careful not to overcook Snow Goose as it will get a liver taste when well done.

Wrap them in bacon (stuff with jalapeno, good swiss cheese, pear, or water chestnut if you want something more/different).  Grill them on medium to medium high heat, turning until the bacon is done.  When the bacon is done the duck will be cooked too. You may want to cut larger breasts in half to make them where you can wrap them easier and eat them in a bite or two.

Soak wood duck breasts in lowrys herb & garlic marinade for 3 or 4 hours, cut slot in midddle of breast (long ways) with a fillet knife, cut up jalapeno peppers into quarters, fill the pepper quarters with cream cheese, stuff a cream cheese filled pepper quarter down into the slot you cut into the breast, wrap with bacon and secure it with a toothpick, get charcoals in the grll all white and make sure grill is as hot as its going to get!!,cook the breasts about 3 to 4 minutes, then flip breasts and cook 3 to 4 minutes on the opposte side, cook medium rare, be sure not to over cook them!!!! there will be a lttle blood but nothing to be allarmed about. Try it and let me know what ya think.

Shotgun I usually wrap the duck slice on top of a half jallapeno that is filled with cream cheese and wrap with bacon, but are you saying wrap the jallapeno inside the duck breast? Sounds like hell of an idea!
