Some of the nation’s leading chefs of wild game cooking have donated their time and effort to Ducks Unlimited. The council has developed and recommended all of the products especially for you and your game cooking enjoyment. They understand the intricacies of preparing wild game, meat, poultry or fish to create a uniquely expressive taste.

A. Chef Billy Joe Cross

The producer of 15 cooking shows for national television, Billy Joe Cross has also been the food columnist for Ducks Unlimited magazine and is the author of seven cookbooks and the editor of three.   Billy Joe has served as president of the Mississippi Flyway Council and as president of the Southeastern Association of Game and Fish Directors.  The Mississippi Wildlife Federation chose him as Wildlife Conservationist of the Year in Mississippi, and in 2001 he was appointed to the Dean’s Advisory Committee in the school of Wildlife Forestry and Forest Products at Mississippi State University.  Billy Joe has also been appointed to the Board of Directors of the Mississippi Nature Conservancy.   In his spare time, Billy Joe often assists with wild game dinners benefiting local colleges and churches.

B. Chef Eileen Clarke

Culinary Council Member Eileen Clarke is the author of seven wild game cookbooks, the last two published by DU: “Duck and Goose Cookery” and “Upland Game Bird Cookery.” She also writes the game cooking column for “Successful Hunter.” When not cooking, she can be found with her husband, John Barsness, walking along some bit of water in the quest to keep the larder full and varied.

C. Chef Lisa Freeman

After a great run as executive chef for NASCAR, Lisa has returned to her career as an independent, wild game and outdoor chef! Hostess of the “Taste of the Outdoors” recipe segment, within the “California Sportsman” radio show, and recognized TV personality, Chef Lisa is currently entertaining clients from California’s Napa Valley to the crest of North Carolina’s Blue Ridge Mountains. She is an outdoor enthusiast and an experienced waterfowler. She and her family have supported DU since she was a child.

D. Chef Scott Leysath, - The Sporting Chef™

Scott has found his niche in gourmet fish and game cooking and has become a premier authority on the subject. He makes weekly personal appearances on outdoor-related television and radio programs nationwide including DUTV and DIY’s home Grown Cooking. His Sporting Chef TV show earned popular acclaim, including back-to-back Excellence in Craft Awards. His current program Hunt Fish Cook™, airs in all fifty states. When not in front of the camera or cooking, he is an avid outdoorsman, hunter and conservation enthusiast.
